Why not consider:

• hand colouring black and white photographs.
• manipulating photocopies of photographs.
• using overhead transparencies.
• combining photography with other forms such as collaging over photographs.
• documenting performance or installation artworks photographically.

There are also hundreds of examples of student works and lessons available on the Teaching Resources CD available through The Arts Unit. For a more "hands-on" approach, why not look at attending one of the Operation Art Workshops which are held in many locations across New South Wales.
